The sausage will be easier to handle if it is in one piece, but links are also fine.


  • 2 pounds Italian sausage, preferably in one piece
  • 1 cup red wine


Place the sausage in a frying pan that will hold it in a single layer. Cover the sausage with water, and cook until the water evaporates, about 30 minutes. Add the wine, and cook until the sausage is nicely browned, turning it once so that it browns evenly on all sides. Serve the sausage with the pan drippings, and good bread for dipping in the juices.
