  • ¼ cup extra-virgin olive oil
  • 1 rabbit or 1 chicken, cut into serving pieces<


Heat the olive oil in a large frying pan that will hold the meat in a single layer. Brown the meat on all sides, add the vinegar, and turn the meat so that all the pieces are flavored as the vinegar evaporates. Add the onion, celery, capers, olives, salt, pepper, and wine. Reduce the heat to a simmer, cover the pan, and continue to cook for 45 to 50 minutes or until done. Check once in a while
