My brother Carmelo Bellia sometimes cooks this leg of lamb for Christmas dinner by hanging it with a string on a hook in the front of the fireplace, so that whoever comes near it gives the string a twist, allowing the meat to turn and to cook evenly.


  • ½ head garlic
  • ½ bunch Italian flat-leaf parsley
