  • Salt and pepper to taste
  • 2 pounds fresh sardines, cleaned<


Mix the flour, salt, and pepper. Roll the sardines in flour, shake off the excess, and set aside. Heat the oil in a large frying pan, add the sardines, and fry until crisp and delicately browned on both sides. Serve hot with lemon wedges if desired.
