Sometimes I take the leftover cooked cod, flake it, and use it together with the pan juices as a sauce for spaghetti. You can have it plain or topped with Toasted Bread Crumbs.
Heat the olive oil, add the garlic and sauté until it barely begins to color. Add the parsley, stir, and add the fish together with 1 cup of water. Season to taste with salt and pepper. Cover the pan, lower the heat, and cook for 20 minutes or until the fish is opaque and it flakes easily. Serve hot or at room temperature with crusty bread to dip into the juices.
