Couscous, a North African import, is one of the most typical dishes of Sicilian cuisine. Traditionally it is steamed for 1 hour in a special pot that holds the water on the bottom and the grain on top. The steam that comes through the holes of the tight fitting top of the pot is kept from dispersing by sealing the two pots with a strip of dough that is removed at the end of the cooking time.
