Peel or scrub the zucchini very well, cut into ½ inch rounds, and set aside. Heat the olive oil in a large frying pan, add the garlic and fry until crisp and golden. Remove the garlic from the frying pan, and set aside. Fry each zucchini round in the garlic-flavored olive oil until delicately browned on both sides.
