Zucchini flowers are a great treat, and are very easy to grow. We plant zucchini in our garden just for the flowers, since they are not always available in grocery stores. You can substitute tiger lily flowers, which grow on the side of the road, and are not only edible but delicious. The buds can also be cooked like asparagus.
Beat the eggs with the flour, ¼cup water, salt, and pepper. Dip each flower in the batter, and fry in the hot oil until very delicately browned on both sides. Drain on paper towels, dust with a little salt and serve hot.
