Dry beans must be soaked, so plan accordingly.

Wash, drain, and chop the celery including the leaves. If using soaked beans, drain, rinse, and drain again before placing in a pot and covering with 2 quarts of cold water. Place the pot on the stove, bring to the boil, then lower the heat to a simmer, cover the pot, and cook for ½ to 2 hours or until tender. Add the chopped celery and cook 30 minutes.
