  • 4 medium potatoes, unpeeled
  • 2 medium onions, unskinned
  • Salt and black pepper to taste

Method

Bring 2 quarts of water to the boil, add the unpeeled potatoes, and simmer for 10 minutes. Add the unskinned onions, and cook together for another 30 minutes. Strain and let cool.

Peel the potatoes, cut them into chunks, and place in a bowl. Skin the onions and quarter them. Add salt, pepper, g
