  • 2 bunches scallions
  • 2 tablespoons capers in salt, rinsed
  • ¼ cup


Clean the scallions and trim away the green leaves. Cut each scallion in quarters lengthwise. Place them in a glass container, add the capers, oil, and vinegar. Mix them well, and allow the salad to marinate for at least 1 hour. Serve in small quantities since it’s quite pungent.
