  • 3 cups flour
  • 4 eggs
  • Pinch of salt

Method

Mix the flour, eggs, and salt by hand or in a food processor. Shape into a ball, coat lightly with a few drops of olive oil, cover, and let rest for 30 minutes.

Cut into 4 pieces, and roll each piece into a thin log about 12 inches long. Cut each log into ½-inch pieces, and deep-fry the pieces in hot oil until golden. As you fry them, place on paper towels to absorb the oil.
