Mix the orange peel into the almond paste, and roll into 2 logs. Cut each log into 8 pieces, and roll each piece into a ball. When all are done, coat each ball with egg white, and when all have been coated, roll each one in confectioners’ sugar. Place the sugar-coated balls on a baking tray that has been sprayed, covered with wax or parchment paper, and sprayed again. Let dry for at least 30 mi
