  • pounds ricotta (3 cups)
  • ¾ cup sugar

Method

Mix the ricotta, sugar, eggs, and cinnamon and refrigerate while you prepare the crust. Preheat the oven to 350 degrees.

If using pastry, divide the dough into 2 portions. Roll out the first piece into a circle that will fit a 9-inch pie plate. Spoon the filling into the pastry
