This South African curry is a result of the indian migration to South African sugar plantations in the nineteenth century. This version is a twist on the classic; it has a sweet kick from fennel seeds, while raisins and carrots add a rich color and texture. My South African mother-in-law introduced this dish to me; the result is a fusion of flavors that is best served over basmati rice.
