  • 6 red mullet (goatfish) weighing about 9 oz. (250 g) each
  • 3 shallots
  • 2 medium tomatoes

Method

Preheat the oven to 350°F (180°C).

Scale the fish and remove the gills, but don’t clean otherwise. Peel and finely chop the shallots. Blanch the tomatoes, peel them, and chop them. Wash the mushrooms in water with a little lemon juice squeezed in and slice them. Set all the veg
