Method

Ask the fish seller to clean the fish by removing the gills and cleaning without opening the stomach.

Carefully wash the parsley and remove the stems. Finely chop the parsley and set aside.

Salt and pepper the fish, then roll them in flour, and shake them to remove any excess before cooking.
