Sprinkle this on fish or chicken just before grilling or roasting, then add a little bit more after the cooking is done. Also good on lamb and game birds.

Ingredients

  • ½ star anise
  • 1 clove
  • ¼ teaspoon nutmeg, preferably in one piece rather than ground<

Method

  1. Combine all the spices except the salt in a small skillet and turn the heat to medium (if any of the spices are already ground, hold them aside with the salt). Toast, shaking the skillet occasionally, until fragrant, just a minute or two.
