Just one of the many unusual flavor variations for crème brûlée. You could make a coffee-orange crème brûlée following the same pattern, simply by using crushed coffee beans (about ¼ cup) in place of the green tea powder (strain them out after the infusion) and orange instead of lime.

  • 1 tablespoon green tea powder (macha), found at Japanese markets

  1. Heat the milk in a small saucepan over medium-high heat until a few bubbles rise to the surface. Stir in the macha and the lime zest and let cool for about 5 minutes.
  2. Meanwhile, beat together the egg yolks and sugar until light yellow. Pour about a quarter of the milk into this mixture, then pour the sugar-egg mixture back into the milk and stir. Add the cream
