Quiche was my very first encounter with pastry. I don’t remember it being a major disaster, so I guess that’s why I’ve never felt daunted by anything that involves pastry. I had a great home economics teacher who taught me always to keep everything as cold as possible.

Ingredients

For the pastry

  • 210 g cake flour
  • 5 ml salt
  • 90

Method

  1. To make the pastry, sift the flour and salt into a bowl and rub in the butter using your fingertips until the mixture resembles breadcrumbs.
  2. Whisk the eggs and add them, a little at a time, to the flour mixture while mixing with a fork. Add only enough egg to form a soft dough.
  3. Wrap the dough in cling film and chill it in the fridge for 30 minutes.
