When I was given a choice of subjects to take in high school, home economics was at the top of my list. What better way to spend a class than cooking and eating, right? Well, home economics turned out to include needlework and cleaning, too, which I wasn’t that into, but the cooking classes made up for all the other domestic stuff. Home economics was where I began to develop my cooking skills and where I learnt the actual science behind cooking and baking. The recipes in this chapter are some of my favourites from that time, many of which I still regularly make to this day.
