Method

Put in a saucepan two shallots finely chopped, two tablespoonfuls of vinegar, salt and freshly ground pepper. Cook a few minutes, then add about five pieces of butter the size of a walnut. Cook again, stirring with a wooden spoon for a few minutes, but do not let it boil.
