I HAVE A THING ABOUT CUMIN; it’s one of the many spices found in curries that gives that addictiveness and craving for more. In North Africa, cumin is used a tot as it is in this simple dish with just carrots. We don’t do anything as interesting with carrots, do we? The sweetness of the carrots and the warming flavour of the cumin are just perfect for each other.
