THIS IS BASED ON THE CLASSIC TARTE FINE AUX POMMES, and the rhubarb works just as well as apples. I served it to some friends at a dinner party - they weren’t rhubarb lovers at all, but they still managed to leave clean plates. Try to select rhubarb stems that are bright red and of an even thickness, as the end result will look better. I wouldn’t bother making your own puff pastry for this tart, as the pastry is rolled so thin you won’t notice.
