Many of Switzerland’s wine-producing regions make soups using white wine–you’ll find them throughout the Valais, along Lake Biel, from Morges to Spiez. There’s even a famous version from Solothurn, the Soledurner Wysüppli: an elegant soup with roots in the 16th century, when Solothurn was home to a succession of French ambassadors.
The aromatics in each recipe vary, but most versions involve a good amount of local wine and some cream to smooth everything out.
