The Swiss love Nüsslisalat/Doucette/Formentino. In English, these hearty bunched leaves are known as mâche, cornsalad, rapunzel or lamb’s lettuce. Be sure to wash these little bunches of leaves thoroughly–they grow close to the ground and tend to accumulate grit and soil.
