As the legend goes, herdsmen in the Alps used to lay their cheese wheels next to the fire and when the cheese got melty, scrape it onto their bread. It was the people from the canton of Valais, however, who coined the term racler, from the French word “to scrape,” and devised the way it’s eaten today.

Nowadays you can use an electric raclette oven, but in a pinch you can also melt the raclette under the broiler in the oven or even over an open fire.
