Originally a farmer’s breakfast, the Swiss now enjoy this grated, fried potato pancake at any time of day, either as its own meal or as a side dish. Its name is also used in reference to the imaginary barrier between the German- and French-speaking parts of Switzerland. Röstigraben (Rösti ditch) denotes the linguistic, cultural and political disparities that separate the two regions.
