Plain in Pigna is a traditional recipe from the Engadine valley in the canton of Graubünden. This dish removes the two most annoying aspects of Rösti-making–needing day-old boiled potatoes, and the dreaded flip. For this dish, you can use raw potatoes and bake it in the oven.

Ingredients

  • 800 g ( lbs) potatoes
  • 3 tbsp fine semolina or cornme

Method

Preheat oven to 200°C/400°F/gas mark 6.

Peel and grate the potatoes. In a large bowl, mix together the grated potato, cornmeal, flour, nutmeg, salt, pepper, Bündnerfleisch, and bacon.
