A classic along the shores of Lake Geneva, these simple fish filets in butter are best enjoyed with a glass of cold, crisp, local Chasselas wine.
Pat the fish filets dry and season with a little salt and pepper. Dredge them in flour, shaking off any excess.
In a large frying pan, heat 2 tbsp of the butter. Add the fish in batches and cook over medium heat until golden (about 1–2 minutes per side). Keep warm in an oven on low heat (70°C/150°F).
