Although there is no agreement on filling or method, it is clear that Capuns come from Surselva, a district in the west of canton Graubünden. Originally this was food for peasants, but now it is a specialty–served in restaurants throughout the region and loved by tourists and locals alike. You’ll find the traditional method on the previous page, but this method, which spreads instead of wraps the batter, is an easy alternative.
