You’ll find these nutty, chocolate beauties on Christmas cookie platters throughout the country. Originating in the city of Basel, they were initially baked not only at Christmas, but also for weddings and other special occasions.
In a large bowl, whisk together the nuts, sugar, chocolate, cocoa powder, cinnamon, and salt.
In a separate large bowl, using an electric mixer with a whisk attachment, whip the egg whites until soft peaks form. Fold in the dry ingredients and kirsch.
Form into two discs, wrap, and chill in the fridge for about an hour, or until firm.
