These cookies, known as Miroirs in French and Discoletti in Italian, can be sandwiched with your jam of choice–favorites being raspberry, currant or quince. The Swiss-German name Spitzbub refers to a mischievous boy, and the cookies were so named because of the jammy faces cut into the dough.

  • 170 g (¾ cup) butter, room temperature

Method

In a large bowl, beat together the butter and sugar for about 2-3 minutes, or until pale and fluffy, then beat in the egg, vanilla and salt. Add the flour and mix until combined. Form into a disc, wrap, and chill in the fridge for an hour, or until firm.

Preheat oven to 180°C/350°F/gas mark 4.
