The whole point of this tart is the caramelised texture of the base ingredients rubbing shoulders with the flaky buttery pastry, so please invest in a good-quality butter puff pastry.

You could also make versions of this tart using sweetly caramelised red onions or leeks, thinly sliced baby beetroot or thick rounds of zucchini. If you were going to try any of these options, I’d recommend replacing the tarragon with thyme.
