This is a great way of clearing out the fridge and store cupboard. Any kind ot tinned beans will work and feel free to change the vegetables, depending on what you have. The essential ingredients are a good stock, the tinned tomatoes, the Parmesan and the basil.

Ingredients

  • 50 ml olive oil
  • ½ onion, finely chopped
  • 1 carrot, peeled and cut into 1 cm cubes<

Method

  1. Heat the olive oil in a saucepan, add the onion, carrot and celery and cook for 3 minutes. Add the leek and garlic and cook for a further 2 minutes.
  2. Pour in the chicken stock and add the tinned tomatoes, thyme and bay leaf. Bring to the boil and simmer for 10 minutes. Add the spaghetti, cook for a further 8 minutes, then add the beans and warm through.
