Rillettes are a traditional French dish made by combining shredded cooked goose, pork, or duck with rendered fat and spices. While such a concoction may not sound terribly appetizing, there are few better things to spread on bread as a light snack or before dinner as an hors d’oeuvre. Lately, rillettes made out of seafood are appearing on menus in France and the United States. Shredded salmon is combined with crème fraîche, whipped cream, or homemade mayonnaise. Because of its full flavor,
