These tender chai-infused pears are the perfect way to end an Indian-inspired meal, such as the mild Southern Indian vegetable curry.


  • 155 g ( oz/1 cup) coconut sugar
  • 3 tablespoons honey
  • 4 cm ( inch) piece fresh ginger, thinly sliced
  • 6 cardamom pods, cracked
  • 2 cinnamon sticks, broken in half
  • 8 cloves
  • 1 teaspoon black peppercorns
  • 4 black tea bags
  • 4 firm pears, such as beurre bosc, halved, cores removed
  • vanilla ice cream and toasted pistachios, to serve


Put the sugar, honey, ginger and spices into the slow cooker. Pour in 1.5 litres (52 fl oz/6 cups) of boiling water and stir well to dissolve the sugar. Add the tea bags and leave to steep for 15 minutes. Remove the tea bags and discard.

Add the pears to the slow cooker. Cut out a piece of baking paper to fit the slow cooker and lay it directly on the surface of the liquid. Cook on low for about 3½ hours until the pears are tender – the exact cooking time will depend on their ripeness.

Serve the pears hot, cold or at room temperature with vanilla ice cream and toasted pistachios.
