This loaf’s roots reach back to Ceres, the organic bakery that Craig and his brother Greg Sams owned on Portobello Road in London’s Notting Hill. In turn, Ceres was inspired by the desem baking of Omer Gevaert at the Lima bakery he founded in Ghent, Belgium, in 1963. The loaf continued to evolve when Craig and his wife Jo took over Judges Bakery in Hastings on England’s south coast, with the addition of kelp granules and hemp, sesame
