Adding the coarsely grated Bramley apple and the zest of 2 lemons stops the toothaching sweetness that is almost too much to bear. You may add a large handful of walnuts too if you want more crunch. If you don’t have enough end bits of pastry to lattice the top it really doesn’t matter. A classic.

  • 3 tbsp. (double) cream

Preheat oven to 180°C/Gas 4. Make shortcrust pastry, bake blind in the usual way, dry out in the oven in the usual way.
