This is a completely self-contained and perfect picnic tart to be eaten warm or at room temperature. Scarmorza is a delicately smoked fresh mozzarella, if you can’t find it, use mozzarella di bufala. The filling is only cooked for a brief time, which means the mozzarella holds its shape and doesn’t go stringy.

Preheat the oven to 180°C/Gas 4. Make shortcrust pastry with 180 g/90 g<
