This tart is an Irish tricolour of a tart, with the saffron pumpkin, green sage and white. You may make it with red onion squash or sweet potato if it suits, the roasting arrests any wateriness and strengthens the flavour, it also gives texture.

I added young sage leaves and their flowers, a vibrant purple, as it was that time of year and my sage bush was in flower.

Crottins are aged, so they crumble without disintegrating and have a characteristic fudgy sal
