Even if you have a wood-burning pit, you may not want to fire it up for a full day every time you want some brisket. This is the best alternative style we’ve found, and it works great in a water smoker or charcoal grill. You won’t get a full measure of the old-time barbecued brisket flavor, but you’ll still have plenty to boast about.

Ingredients

Dallas Dandy Rub

  • 2 tablespoons Smoky Salt or hickory-flavored salt
  • 2 tablespoons packed brown sugar

Method

  1. The night before you plan to barbecue, stir together the dry rub ingredients in a small bowl. Combine 2 tablespoons of the rub with the marinade ingredients in a blender and puree. Place the brisket in a plastic bag and pour the marinade over it. Refrigerate the brisket overnight.
  2. Drain and discard the marinade. Pat the brisket down with all but 2 tablespoons o
