Roast cauliflower with chilli, garlic and thyme

As any good cook will tell you, this is a ridiculously easy way to transform what is otherwise quite a bland vegetable: roasting cauliflower brings out its sweet nuttiness, and I love this dish on nights when I just want to veg out (sorry, couldn’t resist) in front of the TV.

Ingredients

  • 1 large head of cauliflower, broken into roughly equal-sized florets, stalk trimmed and chopped
  • 1 fresh red chilli, thickly sliced

Method

Preheat the oven to 200°C/gas mark 6.

Put the florets of cauliflower and chopped stalk in a bowl with the chilli, garlic and thyme sprigs, and stir. Drizzle over a glug of oil and season with salt and pepper. Tip it all into a roasting dish or tray and drizzle a little vinegar
