When we had a rare heatwave, this summertime treat rescued me during recipe testing on days when all I wanted to do was cool off by a pool or dip my feet in the ocean. As a boozy variation, try adding a few tablespoonfuls of vodka or rum to the mixture before freezing.

Ingredients

  • 45 g fructose (fruit sugar) or 60 g granulated or caster sugar

Method

Make sure your freezer is at its coldest setting. Have 6 small ice lolly moulds ready.

Put the fructose or sugar in a small saucepan with the vanilla and salt, add the water and bring to a simmer. Let the sugar dissolve completely before removing from the heat. Leave the sugar solution to cool down, then add the lemon juice and zest to the mixture.
