Although I’ve provided a list, you can add or eliminate any vegetables you like in this wonderful soup. Both mushrooms and sweet potatoes make nice additions.
Heat the oil in a large pot over medium fire. Add garlic, and saute until the onions are transparent.
Add the vegetable stock and vegetables. Cover the pot and bring to the boil.
Reduce the heat to medium and continue simmering until the vegetables are cooked, approximately 25 minutes.
Add the Parmesan, and salt and pepper to taste, and stir well.
