This vegetarian dish, which is extremely popular amongst deli customers, is great with a simple tomato and onion salad, or with a cabbage and tomato salad dressed with garlic and lemon and sprinkled with dried mint. It can be eaten warm or at room temperature. Heavenly.
Place the lentils in a pot and cover with water. Bring to the boil and reduce fire to medium. Cook until nearly done, approximately 25 minutes.
Add the rice and more water, making sure the grains are completely covered. Add salt & taste. Simmer together until all water has evaporated and both grains are cooked.
Meanwhile, heat the oil in a frying pan over medium fire, being
