These muffins are a winner with the kids and can be made really quickly. I like to serve them still warm with a drizzling of maple syrup over the top and some extra banana sliced on the side. You could, however, change the flavourings – raspberries and white chocolate are delicious, or cut out the chocolate and replace with dried fruits, more nuts or even seeds. The method would remain the same, just add the alternatives towards the end of mixing and bake.
