A stock made from fresh crab shells elevates this luxurious soup, though a commercial or homemade fish stock could be used in a pinch. The intensely flavorful stock is thickened with a light roux and balanced by toasty golden garlic and dry white wine.

Ingredients

  • ¾ cup extra-virgin olive oil
  • 12 cloves garlic, coarsely chopped
  • 1 lar

Method

  1. Combine oil and garlic in a 4-qt. saucepan. Bring to a simmer over medium and cook until garlic is golden, 3–4 minutes. Using a slotted spoon, transfer garlic to paper towels to drain and set aside.
  2. Raise heat to medium-high; add shallot and cook until soft, 2–3 minutes. Add wine and cook until reduced by half, 3–4 minutes. Stir in flour and cook for 2 minutes.
