The quintessential dish of the Dalmatian coast is a hearty fish stew called brodet, often made with monkfish. Although the possibilities for what goes in a brodet are open to creative interpretation, the guidelines for how to cook it are not: You layer the ingredients in the pot, you put the pot on the fire, and you don’t stir the contents. Less than 30 minutes later, the stew is done. This technique ensures that the fish fillets remain intact.
