The secret to the intense flavor of this delicious tomato soup is to smoke the plum tomatoes in a stove-top smoker before you cook them down in red wine. Toasted baguette slices spread with garlic butter are the perfect accompaniment.

Ingredients

  • 2 tbsp. mesquite wood chips for an indoor smoker
  • 3 lb. ripe plum tomatoes, halved

Method

  1. Prepare a stove-top smoker: Place wood chips in a small pile in center of smoker bottom. Place drip tray and rack on top of wood chips. Arrange tomatoes on rack, cut side down, and slide on lid. Place smoker on a stove-top burner over medium. When smoke appears, let tomatoes smoke for about 7 minutes. Turn off heat and let sit, covered, for 10 minutes.
